You are essentially talking about chaos and instability, and the way they impact consciousness, but there's a universe full of things one could say about that.
The double pendulum you posted is a perfect example of what I'm trying to say: it's a very simple device, but its motion is very complicated and hard to predict. Its dependence on the initial conditions is so strong that an apparently negligible shift in the initial setup can lead to dramatic changes in the way it behaves. Furthermore, no two double pendulums are alike: a particular trajectory, however chaotic may it be, can only be obtained with one particular setup.
This, I think, is what struck you the most about this kind of chaotic motion: you start with a very simple setup, and you essentially never obtain the same result twice.
But there's more.
The motion of the double pendulum may be chaotic, but it's still "contained", in a way. It cannot exceed a certain set of boundaries, for example it cannot move randomly: however difficult may it be, it's always possible, at least in principle, to predict the complete trajectory of any double pendulum (i.e. it's deterministic).
